Holding a practical workshop on dough rheology by Pakfan Company in cooperation with Behnam Flour Factory
Perhaps in the early days, man, willingly or unwillingly, was able to achieve the essence of flour by placing a heavy object on grains, but since then, all technologies have been advancing based on the demands and needs of daily life, and undoubtedly, the flour and bread industry has not been left out of this advancement.
In the past few decades, the upward trend in technology from manual and water mills to modern mills has been accompanied by significant progress and is clearly visible in Iran. This is such that today in Iran, some flour production factories are capable of producing various types of flour with European quality.
Behnam Flour Company started construction of a hammer flour production unit in 1989 and it was put into operation in 1991 and continued to operate until 2007. However, due to the government’s policies regarding the conversion of hammer units to roller mills, it started construction of a roller mill flour production unit with a daily production capacity of 200 tons of flour and reached its final operation in 2008.
In order to serve the society and produce high-quality flour, this company purchased a complete production line from OCRIM Italy to provide a new service to its esteemed consumers by producing high-quality flour. It is worth mentioning that this unit, in addition to having a modern production line, also has physicochemical and acroditie (partner) laboratories, which have been assigned as partners of the Khorasan Razavi Standardization Office since 2013. In this regard, in order to better achieve the above goals, this production unit purchased a complete package of rheology equipment from Brabender, a German company.

It has an R&D license from the Khorasan Razavi Industries and Mines Department. It is also worth mentioning that this unit is the holder of the Golden Apple statue from the sixth conference of the province’s top industries in 2011, in which it was recognized as one of the province’s exemplary industries by the Food Supervision Department.

Pakfan Company, always in line with its main mission of creating an effective connection between science and industry, held another workshop in cooperation with Behnam Flour Factory located in Torbat Heydariyeh, Khorasan Razavi Province. This flour factory, which was recently equipped with a full series of rheology devices from Brabender Company, as well as specialized devices
It is equipped with a Texture Analyzer and is one of the few factories that has a standard partner Accreditation Laboratory.
In this workshop, which we had the honor of hosting, Gonabad Standard Bureau, Torbat Heydariyeh Food Supervision Bureau, Torbat Heydariyeh Grain Bureau, Region 5 Specialized Grain and Commercial Services Mother Company, Khorasan Provinces Factories Association, Mashhad Agricultural Research Center, and a group of quality control managers of the province’s flour factories. We will follow a brief description of this scientific and practical workshop together.
